Mel’s Cabbage and Pork Comfort Soup — The Original That Started It All

Some recipes you follow. Some you tweak. This one I carry in my head like a phone number from the before-times — the kind your fingers dial without thinking about it.

I’ve been making this cabbage and pork soup for years. Back in the U.S., it was my all-weather staple, my “I don’t feel like thinking” meal. A big pot would last me days and I never got tired of it. Then I had to double it so my roomie could share in the deliciousness.

When I started nomading, it became my culinary home base. The recipe that grounds me when everything else is unfamiliar. I can usually find most of the ingredients no matter what country I happen to be calling home that month. It’s inexpensive. It’s easy. And it works even in a rented apartment with one dull knife and a soup pot that’s seen better decades.

The secret to its staying power is how adaptable it is. No celery? Skip it. Can’t find canned tomatoes? Fresh ones (with their juice) work. Over the months, I’ve made some version of this soup in from Mexico, across Central America, throughout South America, and now in Southeast Asia — and it’s never let me down.

It held the title of my favorite comfort food for years. Then Vietnam introduced me to an ingredient substitution I wasn’t expecting, and totally flipped the script. That story is here.

But this is where it started. And it’s still worth making.

Mel’s Cabbage and Pork Comfort Soup

A hearty, flexible one-pot meal that’s been my comfort food anchor across multiple countries. Make it as written, or adapt it to whatever your local grocery store offers — it’ll still be good.

Total Time: 75 minutes

Ingredients
Original List Nomadic Swap
2 Tablespoons coconut oil  
1 cup onion (any color), chopped  
2–3 cloves garlic, minced  
1/2 –1 pound ground pork or Kielbasa, chopped  
1 cup celery, diced Omitted
1 cup carrots, chopped  
1 bell pepper (any color), chopped  
4 – 6 cups chicken or vegetable broth  
1 (14 oz) can diced tomatoes (basil, oregano, garlic flavor) 2 cups fresh tomatoes, with their juice
1/2 head cabbage, sliced  
1 teaspoon oregano  
1 teaspoon basil  
1/2 teaspoon red pepper flakes 1/4 – 1/2 teaspoon ground red pepper
OPTIONAL:
1/2 teaspoon
salt (use only if needed — taste it first!) Omitted
Instructions
  1. Heat the oil in a large soup pot over low heat.
  2. Sauté the onions until they’re translucent, about 5 minutes.
  3. Stir in the garlic and cook 30 seconds, until it releases its aroma. Do not let it burn.
  4. Add the ground pork or sausage. Increase to medium heat and cook until browned.
  5. Add the celery and carrots and continue cooking for 3 minutes.
  6. Add the bell pepper and cook for another 2 to 3 minutes.
  7. Add in the remaining ingredients: broth, tomatoes, cabbage, oregano, basil, and red pepper flakes.
  8. Cover and bring to a boil.
  9. Reduce heat to a simmer and cook until the cabbage is tender, about 30 minutes.
  10. Taste. Add salt only if necessary.
    If you bought a nice broth, you likely won’t need it.
  11. Serve and enjoy!

📌 Note: This recipe is forgiving by design. Swap what you can’t find, skip what you don’t love, and adjust the heat to your taste. The only thing it really needs is a good broth and enough time to simmer.
